I have always loved reading www.kellyskornerblog.com! This week on her Show Us Your Life segment, she's having her readers post appetizer recipes, so I had to join!
This is one of my most favorite things to make before heading somewhere or just having a snack at home! It's a dip, but so quick and easy, and such a HIT that you can't not try it! There aren't many ingredients and I've never met anyone who isn't crazy about it! (I have no pictures of the recipe, but people always seem to question the shoepeg corn, so I added the brand I always buy.)
Ingredients
2 cans of White Shoepeg Corn
2 cans of Black Beans
Grated Pepper Jack Cheese
Kraft Zesty Italian Dressing
Roma Tomatoes (depending on if you prefer them or not)
Tortilla Chips
The How To
Honestly, the hardest part is going to the grocery store...the rest is very simple.
1. Rinse the black beans and shoepeg corn and mix together in a bowl.
2. Add grated pepper jack cheese (I tend to add most of the block because I love the spice it adds!)
3. Add in the Zesty italian dressing (the amount depends on your wants, I tend to put half of a bottle, just keep adding until you find it just right)
4. If you decide to add tomatoes (C hates those so I tend to leave them out) just chop them up in to tiny pieces and add them to the rest of the ingredients.
5. You're finished!
This is a great and quick recipe, especially if you're needing something fast and you don't have time to put into it. It's great right after you fix it, but even better if it's set in the refrigerator and settled for a little while.
Buy some tortillas, and you're set!!
I've also taken this and turned it into a dinner chicken recipe. Just cook grilled chicken, melt a piece of pepper jack cheese on top, then add the shoepeg dip! SO DELICIOUS!! Your dish will be guaranteed to be the talk of the party!
